Nine Days Recipes – Try out these recipes from our Nine Days Event
Kotel Cake – Zemira Ozarowski
½ cup peanut butter
100 grams margarine
1 package tea biscuits
1 package confectioners sugar
Topping – 150 grams chocolate chips
Crush the tea biscuits and melt the margarine. Mix all of the above. Spread into a medium sized pan. Melt the chocolate chips and spread on top. Take a spoonful of peanut butter and swirl around on top of the chocolate. Put in the freezer for two hours. Cut into squares and arrange like bricks of the kotel. Cut small pieces of soursticks and place on the “bricks” like leaves.
Scandinavian Medley: Sara Berelowitz
2 medium potatoes
2 medium carrots
2 onions
2 peppers
1 small eggplant – unpeeled
1/3 cup rice
2 cups boiling water1/3 cup oil
salt and dill to taste
3 tomatoes
4 tsp red wine vinegar
Cube vegetables and place half in a pan. Sprinkle (uncooked) rice on top and then pour on the rest of the vegetables. Pour boiling water, oil, and red wine vinegar on top. Sprinkle salt on top and lots of dill. Cut tomatoes into slices and put on top. Cover and bake 1.5 hours 350 degrees and then uncover and bake for another 1.5 hours.
Quinoa Salad: Ayala Hart
Quinoa (cooked)
Peppers (red, yellow, green)
Cucumbers
Red onion
Chickpeas
Mint leaves
Dressing:
Canola oil or olive oil
Apple cider vinegar
Mustard
Freshly squeezed Lemon juice
Salt
Pepper
Onion powder
Garlic powder
Lots of Dill
Mix vegetables and quinoa. Mix ingredients for dressing and mix in to salad.
Ahavat Chinam Banana Muffins – Henny Shor
3 ripe bananas
½ cup oil
1 cup sugar
2 eggs
Mix above, then add
1 ½ cups flour (can be white whole wheat)
1 tsp baking soda
¼ tsp salt
½ cup chopped nuts or chocolate chips
Good for loaf pan or muffins! Bake at 350 for 35-45 minutes
